Menu Plan Monday

I know you have been waiting on pins and needles for this, so sit down and enjoy!  I made my menu plans for the next two weeks. Of course, the menu next week from Thursday on is more like “third verse, same as the first.” That’s okay, right?

This morning, I met Mr Darcy up at his office and we signed, signed, signed and signed our names some more on house paperwork. We had it notarized and I am praying we did it all correctly. The official closing is tomorrow so here’s hoping FedEx is quick about getting our stuff up there.

The weather is wonderful today. Only 72 degrees and WINDY! The boys are playing outside to take advantage of it. Man, they are loud. I am sure our neighbors wonder daily what all the screaming is about.  I caught a great deal on ribs at HEB. A dollar a pound. I bought two giant slabs. Now, how to cook them? I love ribs, I just don’t ever make them. I really want them to come out like Tony Roma’s, too. Maybe I can find a copycat recipe.

We are trying to find people with no family down here to invite over for Thanksgiving. (You know, people like us) So far, we haven’t had much luck. It may be the 5 of us and a 21 pound bird. I hope not.  Do you all remember your first Thanksgiving without your family? I do. I was in college in NC and didn’t get a long Thanksgiving break. I was flying to Texas for Christmas so it was decided that I would stay in NC.  While the people I was with were perfectly wonderful, it wasn’t my family.  I called home during that day and just cried. The house I was at wasn’t having mashed potatoes – only sweet potatoes. That was the straw that broke the camel’s back for me. I was thankful to have a place to go, but it just wasn’t the same.  I wonder how this one will rate. I will have mashed potatoes, that’s for sure!

Here’s what’s coming on our menu plan: (assume there will be more veg than what is listed. I make what sounds good to me that night!)

Monday – Tacos and rice

Tuesday – Pork Chops and Baked Potatoes

Wednesday – Baked Chicken with Asian dipping sauce

Thursday – Grilled Salmon (hoping to have better luck than last week – ugh)

Friday – RIBS

Saturday – (I’m going shopping all day to the outlet mall) Baked Ziti from the freezer

Sunday- BLT’s for lunch and Matzo Ball Soup for Dinner

This week, I am going to make our traditional Cream Cheese Bread that we eat on Thanksgiving morning and freeze it. I have never done that before, so I am hoping it will work. Oh, I am hoping!

Football season is over for this family so we can eat at normal times again. I missed that. We seemed sloppier somehow when eating at 8 pm. It certainly did not feel cool and European which is what I kept trying to tell myself.

Any rib cooking advice would be appreciated.

    Janna, we’ve done ribs lots of different ways, but my favorite is in the oven. My father-in-law taught me. Put your favorite dry rub on the ribs. Put the ribs in a big roasting pan (like for turkey) and put the lid on. Bake at 250 for 4-5 hours. You can baste with your favorite sauce the last 30-45 minutes if you’d like. The meat just falls off the bone. That’s the way I like them. The boys, however, like them chewier so maybe I cooked them too long last time for their taste. : ) Enjoy them however you cook them!
